【飲食天地】 龍蝦湯

龍蝦起咗肉, 剩番一大堆殼嘅解決方法
[u]材料[/u]
龍蝦殼 500 克 或以上
牛油 75 克 (6 湯匙)
洋葱一個切粒
西芹一條切粒
紅蘿蔔一條切粒
白蘭地 3湯匙
Dry 白酒一杯 (Dry = 無糖)
Fish stock 四杯 = 一公升
[可用金寶罐頭魚上湯 (Campbell’s Real Stock) 或 史雲生清雞湯]
茄膏 (tomato paste) 一湯匙
米半杯 (可以嘅話, 用long grain 美国長米)
Bouquet Garni [用繩縛埋一齊嘅香料, 保括 1 塊 bay-leaf, 3 條 thyme (百里香), 4 條新鮮 parsley, 一塊大蒜葉]
Double (heavy) cream 2/3 杯 = 150 毫升
鹽, 白糊椒粉, 辣椒粉
[u]做法[/u]
1. 在湯煲內放入一半牛油 (三湯匙), 用慢火煮溶, 放入洋葱粒, 西芹粒, 紅蘿蔔粒, 煮熟, 再放入龍蝦殼, 煮到變橙紅色
2. 放入白蘭地 3湯匙, 點着 (目的為咗揮發白蘭地嘅酒精), 之後放入白酒一杯, 慢火煮埋半杯, 再放入上湯, 慢火煮三分鐘
3. 放入茄膏, 米, 及 Bouquet Garni, 將米煮熟
4. 取出龍蝦殼, 用攪伴器將湯打成糊狀, 再放回煲內, 煮滾, 熄火, 放進牛油 (三湯匙), cream, 鹽, 白糊椒粉, 辣椒粉, 攪勻, 上枱

龍蝦湯 is not bad, , it just that tomato paste and cream and 辣椒 can cover up most of the

中西的烹調、食法、用料各異,但中國人的原理和做法簡化很多。簡單如香港人會食蘿蔔牛腩,湯汁已經比美龍蝦湯。當然食法不同麻!但功夫簡單很多。
我曾經同湖北一家人食飯,他們煮的紅蘿蔔羊腩,其實紅蘿蔔湯底同龍蝦湯很接近,但他們的材料只有紅蘿蔔、羊腩兩樣,煮法比香港人會食慣的白蘿蔔牛腩煮法更簡單。自始之後,我才發現紅蘿蔔的妙用!(甚麼茄膏、雞湯都不用) 感謝你的分享!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

1/紅蘿蔔很有益,大家都知,可以推廣。2/在西餐,會經常用紅蘿蔔。如羅宋湯,紅蘿蔔會切成條狀。
3/我上次食的紅蘿蔔羊腩,紅蘿蔔就是大大舊,其實同煲節瓜湯、薯仔湯兩三個鐘差不多(有幾分糊狀,但仍然是湯汁),很一流。色澤紅色,換個上碟,很有西餐feel。

紅蘿蔔本身好 aromatic, 所以紅蘿蔔湯底會有濃香.

西菜嘅 mirepoix 有紅蘿蔔, 西芹, 洋葱 <== 三樣都好 aromatic 突然入online.,
