【飲食天地】 醬炒肉蟹 [樂]

這 味 醬 炒 肉 蟹 是 著 名 的 杭 州 菜 , 以 醬 炒 使 肉 蟹 更 覺 鮮 味 , 是 一 味 能 夠 款 待 親 朋 的 菜 式 。
杭 州人士 ,你有口味ar。

材料
肉 蟹 2 隻
蔥 花 1 湯 匙
薑 粒 1 湯 匙

調味:
( 一 ) 甜 麵 醬 1 湯 匙
( 二 ) 磨 豉 醬 2 茶 匙
( 三 ) 糖 1/2 茶 匙
( 四 ) 老 抽 1 湯 匙
( 五 ) 生 抽 1 湯 匙
( 六 ) 上 湯 1/2 杯
( 七 ) 紹 酒 1 湯 匙

製法:
( 一 ) 將 蟹 蓋 揭 起 , 除 去 肉 臟 , 洗 淨 , 蟹 身 斬 開 4 件 。 油 鑊 燒 熱 , 將 蟹 放 入 油 內 , 泡 約 3 分 鐘 , 以 蟹 身 熟 透 為 合 兜 起 待 用 。

( 二 ) 將 油 鑊 之 油 泌 去 , 留 下 4 湯 匙 , 加 入 薑 粒 、 甜 麵 醬 、 磨 豉 醬 、 糖 、 生 抽 及 老 抽 略 爆 , 即 加 入 上 湯 , 煮 成 醬 汁 , 然 後 將 蟹 倒 入 鑊 內 兜 勻 , 再 加 入 紹 酒 , 最 後 加 入 蔥 花 , 炒 勻 即 可 上 碟 。

NOTE:

( 一 ) 這 是 一 道 杭 州 菜 式 , 十 分 惹 味 。

預 備 時 間 : 15 分 鐘
烹 煮 時 間 : 25 分 鐘

難度: 普通

Fried crab with sweetened bean paste (english)

Not only does the meat from the crab taste good, but the sweet bean paste also make the shell rich in flavour.

[b]Ingredients:  [/b]

meat crabs 2pcs

diced scallions 1tbsp

diced ginger 1tbsp

[b]Seasoning:  [/b]

sweet bean paste 1tbsp

dark bean paste 2tsp

sugar 1/2tsp

dark soya sauce 1tbsp

light soya sauce 1tbsp

stock 1/2cup

shaoxing wine 1tbsp

[b]Cooking Method:  [/b]

Remove cover of crab body. Discard intestines and other organs, rinse clean then cut crab into 4 pieces. Heat oil in wok, then shallow fry crabs for about 3 minutes. Take out and drain when crab is cooked (changes colour).

Pour away some oil, laving only about 4 tbsps, then add in diced ginger and seasonings, bring to the boil, then put crab in and stir fry until well combined. add wine, stir well, then sprinkle with diced scallions. Place on serving plate and serve.

Difficulty: Normal

My Point of view on this Dish:  
從螃蟹的肉不但好味, 並且甜豆醬also make the shell rich in flavour.

this is very tasty, i was originally gonna post cold crab,, but something got in my way....
there is a 醬 that make cold crab taste better, but where do i put it???? under which category???
