我的老闆心血來潮突然想開一閒酒吧,招呼他的客戶和朋友。並且讓我做一份關於酒吧的計劃書,我對酒吧的了解僅限於大概知道進貨、成本控制、員工培訓和員工管理這幾個詞匯要我做一份計劃書就有了相當難度。我真的不知道從何下筆,請熟悉這方面的人幫我一吧! : R/ v( N& n/ N3 W; Q大家可以假想自己是吧台經理要做一份計劃書,你們又會怎麽寫呢?, p+ Q2 i5 b( V X1 h- a

不過可以同你分享下 朋友&親人搞BAR既經驗.0 m B' y G F! s. J& P3 l+ _

首先最簡單最直接要諗既. % ]6 g) x# y1 `9 w- G) I* i就係"金錢"$ c/ w& B& n) S
假如冇足夠金錢support既話. 就做唔到自己想象中既酒吧. $ @( d. M' J6 r+ z鋪位.租金.裝修.入貨.人工. 全都係最基本既成本.7 a' j( }* x) j+ `" }. V; p% B3 }
. p9 W4 t$ @4 g3 K% U
我地由呢個"成本"問題開始傾起啦.2 t# ^" n. ]. W1 Z$ |+ E! t
首先鋪位要選擇適當./ s! T6 H: y6 x1 n3 Q% h% K
我阿姨之前係銅鑼灣開過間bar.( m9 ?+ m$ Z5 _) q+ P
鋪位有"上樓鋪"&"街鋪"比佢選擇.9 r1 y" r# U5 s I" x
最後佢選擇左"上樓鋪".9 A" p2 N! Z1 Z! S: H
"上樓鋪"雖然租金會比一般街鋪平好多. 0 [& |& N& W9 d/ E; Q3 s但客量&客路問題就好嚴重. 真係少之又少... 5 {% t5 \$ z/ o* Q/ c" Z) b; K5 |除左要想盡辦法增加客量 仲要吸引唔同階層既客., @* ?5 r# w$ }5 ^7 j
剩係宣傳費都幾襟計! $ ^/ |2 t" n6 ^+ D0 T所以建議選擇"街鋪"比較穩陣. # b: [3 m, m; j) H" k& d% k! [鋪位則設在旺區比較好. 0 c1 W$ D- n2 W2 c* _雖然旺區鋪租貴.但因為人氣既問題 4 T3 V- ?3 W& F1 Q! |0 U
賺到既話.利益回報都幾可觀.7 _% o) c) m9 ?1 a, v' \
而入貨方面.要識人識批發. ( I8 V( y9 j4 O5 a當然大家都知入貨價係愈平愈好.5 f$ Y, T! B' `: {2 k1 ^- q
但要考慮埋"長做長有" "得閒送酒"呢兩個問題 * I$ h5 D8 g3 T+ T' g2 C. V( R所以不適宜"講價太低". 要以"數量"&"人情"作為優先選擇.! B% v. M1 J5 G6 U' f1 v
裝修方面.又係要識人.要盡量搵熟人搞.& }: n5 ]' a7 F; A8 |( U( }; G
比外人搞裝修的話. 隨時食完你錢 加你價 .一係就慢慢用次貨同你黎做. 3 }: s0 h/ P% M
所以要比熟人搞.賣個人情比對方外. 對自己都好有保障. h4 Z8 i( y S* A
而呢幾年黎酒吧行業因為開到成行成市既關系.6 W% _3 J4 v7 Y3 J+ @+ w) s
大家都開始有唔同既主提 唔同既方式黎吸引新舊顧客. ) p O2 Y4 d) z$ E% {例如有部份bar會請DJ打歌. 有部份會搞rave 有部份會搞乜乜乜之夜等等... 0 B( m# X) d, q所以做老闆除左要識做生意外. 仲要不斷革新. 不斷要有新"艾D也" D% V8 }/ o$ P" H. v
而且老闆仲要對"酒"呢方面有相當學問 相當既知識先好啵. 5 Y, G& P: U6 C; u. K) s9 C俗語話 : 要做好某一樣野 首先就要裝備好自己. 6 \5 \: }+ X% w) s j, v& R @ ?7 O& v4 } m2 \& }1 S

all things such as product (or services), price setting, promotion and even the location must base on your company position......you need to identify each segment such as whether i target people who are 15-18 or 18-22 or even office worker or even executives etc, they all have different specific demand towards the Bar service. 5 f* Z$ \!
