【飲食天地】 龍蝦粥
材料
Live lobster
Bamboo fungus 10 pieces
Fresh straw mushroom 1/2 cup
Chinese kale 6 stalks
Rice 105g
Water 14 cups-congee
Water 2 to 3 cups-boiling water
Little Salt (u could add little pepper not too much, since original recipe has pepper but i don't recomend, i think pepper would destroy the original seafood taste in lobster)
1: Rinse and drain rice. Bring water to a rolling boil, lower rice and cook over medium heat for 50 minutes.
2: Kill and dress lobsters, chop into around 15cm width each pieces, scrape the lobster meat out, remove the body of lobster. Cover body of lobster with boiling water and leave aside for later use. (2 to 3 cups of water).The body of lobster can not overcook too long or the taste will run away.
3: Slice straw mushrooms, soak and chop bamboo fungus roughly, cut Chinese kale into sections, parboil all ingredients
4: When congee is ready, season to taste, add all ingredients and cook well.
5: Lastly stir in the extra boiled of water with the body in the congee..wait a minute or so
6: Serve and taste the lovely congee thx for sing sing willing to translate it in chinese later on, lol |
